24-HOUR CLOVER: IT’S HAPPENING, HERE’S THE DEAL

In case you haven’t heard, Clover Food Labs is planning to open their sixth location in Central Square this fall. They will occupy the space of the former Hi-Fi Pizza & Subs which shut its doors after more than 45 years of business. Clover has been booming in popularity; to date they have launched seven food trucks, making them one of the the largest food truck chains in the area, and five restaurant locations in the past several years. The big difference here: it will become the first fully-approved 24-hour restaurant in Cambridge.

“The Hi-Fi always had late hours,” said CEO/Founder Ayr Muir. “They were open until 3am and I always liked the idea of doing a 24-hour Clover.”

Muir said it was not a difficult process to get approval from the Cambridge License Commission, as he built support from fellow businesses with members of the community to show that this concept would be welcomed in the neighborhood. They were granted their license the other week, but the votes were split.

The opposing half sided Police Commissioner Robert Haas, claiming the proximity next to the Middle East would mean just one bad incident involving “out of control” crowds, which could change the appeal of Clover’s business. Clover’s 24-hour location will have to be reviewed three months after it opens to determine whether the license will remain instated. Muir however, is remaining optimistic about his future restaurant and the impact it will make.

“I think there are a lot of people awake in the middle of the night and I think it’s nice to have some friendly, positive place they can go,” said Muir.

Clover has been setting trends over the years in many ways. They have tremendous appeal for people who want food that is healthy, fresh, and tasty. They don’t use freezers–all the vegetables and eggs are delivered straight from farms on a daily basis. Their menu is always changing because it is important to Muir that they only use vegetables and fruits that are in season. He is proud that his food business is able to minimize the carbon footprint by eliminating meat and focus on sustainability. At the new location expect late night snacks (fried Grillo pickles) and breakfast sandwiches.

For those who haven’t tried Clover yet, Muir recommended their best-selling chickpea fritter sandwich. Those who have tend to do the same.

For good reason.
